Wusthof's forged knives, including its Classic series, are created in 40-step processes that sculpt them out of one solid block of high-carbon stainless steel. This process results in a rugged, thick, durable blade. The hammering process allows Wusthof to produce the steel blade with a wide lip in which the blade and the grip meet. The bolster keeps your hands from sliding around when you do the intensive cutting! The Wusthof Classic Series features a strong bolster. The bolster is the thickest part of a knife, located between the handle and blade. The bolster adds to the weight and balance of the knife but, more importantly, keeps your hands from sliding down onto the blade. 
  
Most Wusthof knives are made in the perfect range, between 55-60 on the Rockwell scale. The Classic collection is slightly more durable, scoring at 58. The Classic line has more solid-feeling blades than the Gourmet line, but all Wusthof's knives are made from an optimal mix of stainless steel. 
    
Each Wusthof edge contains the same mix of carbon (for toughness), chromium (to increase resistance to stains), molybdenum (to increase toughness and resistance to corrosion), and vanadium (for toughness and durability). Wusthof Classic knives are honed with 14-degree angles on each side, making them noticeably sharper than the Gourmet knife's edges, which are pointed with an 18-degree tip on each side. 
    
Because the Classic Line of knives from Wusthof are more complex, they tolerate more challenging foods, which can require re-sharpening on other, lesser knives. In addition to being capable of handling a sharper edge, all of Wusthof's forged knives, including the Classic, utilize PrecisionEdge Technology for optimal benefits in the kitchen. It is a complex process, but to put it simply, PEtec Technology uses robots, lasers, honed stone, and special discs to measure, sharpen, and polish edges. The result is a razor-sharp blade that you won't have to maintain all that often.
