This is a beautifully finished chef’s knife with a large, 9.5’’ blade. An incredible 100 layers of stainless steel are used to create this blade, which has a stunning Damascus pattern on the outside and a rating of 63* on the Rockwell hardness scale. The edge angle used on the blade is between 9.5* - 12* on each side, and there is a traditional Japanese D-Shaped birchwood handle for easy control while working.
Inside the layers of stainless steel is a Micro-Carbide MC63 powdered steel core which will help the knife to stay incredibly sharp and durable as the years go by.
