The 9.5" GYUTOH Chef's knife from Miyabi is designed for effortless precision when slicing meat or fish. Its slim yet stable blade ensures clean, controlled cuts with every use. Featuring an authentic Japanese profile, the blade is finished with an exceptionally sharp Honbazuke honing, symmetrically polished at a 19-degree angle. The sharpening process involves two rounds on rotating stones, followed by a final polish on a leather wheel. The exquisite handle, crafted from Masur birch, showcases an elegant blend of light and dark lines, complementing the floral Damask pattern on the blade. This unique combination makes each knife a work of art. Designed with a traditional D-shape, the handle provides perfect balance, ensuring optimal control and fatigue-free cutting. At the core of the blade lies Micro Carbide MC63 powder steel, encased within 100 layers of two distinct steels with varying hardness levels. The CRYODUR blade undergoes a specialized ice-hardening process at -196°C, resulting in an impressive hardness of approximately 63 Rockwell. With the GYUTOH from the MIYABI 5000MCD series, cutting meat, fish, and vegetables becomes an effortless experience.
