The Shun Classic Series features a proprietary VG-MAX cutting core, high-end stainless steel, which is extremely hard, resulting in an incredibly sharp edge and retains that sharpness longer. The Damascus cladding, with its 34 micro-layers of steel on each side to support the core, offers stain and corrosion resistance and helps food release from the blade. The blade is hand sharpened to a 16º angle on each side for top performance. The D-shaped ebony PakkaWood handle is beautiful, durable, and does not harbor bacteria.

So, what makes each knife so unique in the Shun Classic collection? All Shun Classic series of knives have been designed to handle different tasks in the kitchen with tremendous success! And with 27 exceptional pieces to choose from in the Shun Classic collection, your kitchen can be comprised of these knives alone! Here is a breakdown of just a few of our favorites here at WFE that we believe will make any home cook or professional Chef extremely happy to employ in their kitchen:

The Kiritsuke by Shun is the Master Chef's knife in Japan. This Shun Classic blade can be used for any task, like a chef's knife. Whether you need a julienne, chop, or Brunoise cut for your vegetables or a versatile knife for cleaning and cutting boneless meats, mainly fish, the Kiritsuke is the answer. The straight edge makes this knife ideal for push cuts and slicing. Once you use the Kiritsuke knife in the Shun Classic set, you will reach for it more than any other knife.

The Shun Classic 2.5 "Bird's Beak knife is a great miniature paring knife for peeling and cutting vegetables and fruit. Its curved blade and pointed tip allow unprecedented access and ease of use. Making radish roses and other tasks that require attention to detail on a small scale makes this Shun Classic 2.5" Bird's Beak knife so unique in our eyes. Remember, the small things are just as important as the enormous appliances!

Yet knives are only worth a little if they are dull. The Shun Classic 9" sharpening steel showcases different surfaces on the two sides to keep your Shun Classic knives in peak condition. The silky texture is for daily honing, and the micro-ribbed side is for weekly honing. Shun's 16º angle guide constructed into the steel makes it easy to retain the exact angle while honing. Hand-made with the identical PakkaWood hold as the entire Shun Classic Collection.

The Shun Classic cutlery collection has provided Chef's complete command of their art in the kitchen. The Shun Classic series and all their other models are here for your culinary needs at Williams Food Equipment. Please stop in for a demo of these gorgeous knives or take advantage of our online Shun sales that will appear from time to time!
