Spring Pea & Mint Soup

Spring Pea & Mint Soup
Serves 4

Ingredients:
1 tablespoon olive oil
1 tablespoon butter
1 yellow onion, diced
32 oz. frozen peas
1 leek, washed well and sliced
1/2 cup mint
4 cups chicken broth
2 tablespoons half and half
1/2 teaspoon black pepper
1 teaspoon kosher salt
garnish with fresh mint, finely diced
dollop of sour cream, for garnish (optional)
additional salt and pepper, to taste

Directions:

1. In a large soup pot over medium-high heat, sauté the onion and leeks in butter and olive oil. Salt and pepper while sautéing. 

2. After about 5 minutes, or once the onions are softened, add 3 cups of chicken broth and bring to a boil. 

3. Add the peas and cook for 3 minutes. 

4. Remove from the heat, add 1/2 cup fresh mint leaves, 1 cup remaining broth, and 2 tablespoons half and half. 

5. Blend until smooth and salt and pepper, to taste.

6. Serve warm or chilled. Garnish with more fresh mint, salt, pepper, and a dollop of sour cream and enjoy!
