Constructed with a stainless steel exterior and interior, the cabinet is built for durability and easy sanitation. The ergonomic vertical stainless steel door handle and self-closing door with a 100-degree hold-open stop provide convenient access. Snap-in magnetic gaskets maintain a tight seal to support consistent cooling.

Designed for precision and flexibility, the unit offers both soft and hard blast chilling and shock freezing cycles, controlled by time or by core temperature probe. It can chill from 194°F to 37°F in 90 minutes and shock freeze from 194°F to 0°F in 240 minutes. A high-precision heated multi-sensor core probe comes standard, with automatic probe recognition and a core probe heater button for accurate readings. The evaporator is equipped with a high-flow fan and adjustable fan speed control to maximize cooling efficiency, while indirect airflow protects product integrity and ensures even temperature reduction.

The intuitive control system features an LCD illuminated temperature display, multi-point sensor temperature display button, real-time clock, HACCP alarm display, and pre-cooling cycle option. Operators can access 68 preset programs through the onboard recipe book, with 99 additional memory positions available for custom programs. Infinity mode allows for adjustable set points, and the unit automatically enters conservation mode at the end of a cycle. Additional conveniences include timed manual defrost, USB data recording for compliance tracking, and stainless steel feet for stability.

The self-contained refrigeration system uses environmentally friendly R290 refrigerant to meet modern environmental standards.
