The Chef's Choice Model 1520 Angle Select Electric Knife Sharpener sharpens straight-edge and serrated knives, giving them a long-lasting edge in seconds. You can select sharp, hair-splitting edges or edges with varying amounts of "bite" for more demanding cutting. To form first and second bevels, Stage 1 is for German 20° angle knives and Stage 2 for Asian 15° edges.     Best one yet! - I've owned four electric sharpeners so far and more manual ones than I can count and this is by far the best one yet. Does a fantastic job of sharpening to a dangerous lever both my Global japanese and Victorinox/Wusthof/Henckels european blades. It even managed to impress me by doing a more than decent job on a bread knife!

    Well worth the price. - The Chef's Choice quickly put a very sharp edge on my full selection of knives. While a flat sharpening stone isn't unduly difficult, sharpening used to be enough of a chore that I would use a knife well past the point where I was noticing the lack of cutting ability. Now, as soon as the knife starts to drag, a few passes through this and it is once again razor sharp. From fillet knives to heavy duty hunting knives, this worked on every blade I ran through it; albeit one hunting knife did need a couple dozen passes through the Chef's Choice because it came from the manufacturer with a ridiculously steep angle on the edge.
