An easy summer classic from our friends south of the border is Mexican street corn.  There are many family recipes, but we enjoy our take on this Mexican classic street food. Corn Mexican Style. Food Truck Mexican Corn on the Cob INGREDIENTS 6 Large White Corn 1 cup mayo Juice of one lime ½ cup Crema Mexicana (or sour crème if unavailable) 1 tablespoon each: salt, pepper, cumin 1 teaspoon each: cayenne, achiote, and Chile powder 1 cup cotija cheese ½ cup panko breadcrumbs DIRECTIONS Shuck corn.  Cook on BBQ, or griddle until all sides are slightly charred.  Mix all ingredients minus the cheese and breadcrumbs together.  Mix cheese and breadcrumbs together.  Once the corn is cooked and charred, use a Chef Craft Basting Brush to brush on the lime/mayo mix thoroughly. Sprinkle the cheese/ bread crumb mix thereafter.  Serve and enjoy!  Before cooking, soaking Johnson-Rose 12” Skewers in water, the piercing all the way through the corn is a neat way to hold the corn once completed.
