The Keto (ketogenic) diet has become all the rage in the past couple of years. Ketogenics is based on the principle that the combination of high fats, protein, and low carbs changes the way your body uses energy. The concept of Keto is to take in more calories from proteins and fats, because your body digests them slower than carbs. As a result, this gives you more energy. Even though most of us try to eat a healthy, well-balanced diet, sometimes we just need a piece of BREAD! Every so often I want a bagel, be it toasted and slathered in cream cheese or with butter and jam. Although this is not the healthiest of breakfasts, once in a while, it is yummy for my tummy.
A Brief History of Bagels
What is the history behind bagels you ask? Well, the origins of bagels are a little vague, but it is known that they were widely eaten by Ashkenazi Jews in the 17th. century, however, the first known bagels can be traced as far back as 1610 in Jewish communities in Kraków, Poland. Wherever the bagel came from, it has become quite the treat in North America.
It seems like carbs have become a bad word in this day and age of new fads and diets. Keto – Low Carb Everything Bagels Recipe
Ingredients:
- 2 cups almond flour
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 Tbsp. baking powder
- 1 tsp. dried Italian seasoning
- 3 large eggs, divided
- 2 cups shredded low mozzarella cheese
- 1 cup white cheddar
- 5 Tbsp. cream cheese
- 3 Tbsp. Everything Bagel Seasoning
Everything Bagel Seasoning Ingredients:
- 1/4 cup toasted sesame seeds
- 3 Tbsp. plus 1 tsp. poppy seeds
- 2 Tbsp. coarse sea salt
- 3 Tbsp., plus 1 teaspoon dried garlic flakes
- 3 Tbsp., plus 1 teaspoon dried minced onions
Instructions:
- Mix all of the ingredients together in an airtight container. Shake before using.
Directions for Preparing Bagels:
- Preheat oven to 425°. Line an All-Clad baking sheet with a Silpat Non-Stick Baking Mat.
- Using a flour sifter, add the almond flour, garlic, onion and, baking powder(s), and dried Italian seasoning and sift into a medium mixing bowl. (This mixes all ingredients together)
- Crack one egg into a small bowl and whisk until frothy. This is the egg wash for the top of the bagels.
- In a large microwave-safe mixing bowl, combine the mozzarella cheese, white cheddar, and cream cheese. Microwave for 1 minute and 30 seconds and remove bowl from microwave and stir to combine. Then, return the bowl to the microwave and microwave for 1 minute and mix the dough until all ingredients are combined.
- Now, add the remaining 2 eggs to the almond flour mixture and mix until all ingredients are well incorporated. If the dough gets too stringy and unworkable, simply put it back in the microwave for 30 seconds to soften and continue mixing.
- Divide the dough into 6 equal portions. Using your hands, roll each portion into a ball.
- Gently press your finger into the center of each dough ball to form a ring. Stretch the ring to make a small hole in the center and form it into a bagel shape.
- Brush the top of each bagel with the egg wash.
- Sprinkle on top of each bagel with Everything Bagel Seasoning to taste. Should you choose not to make your own seasoning, most local markets have the Everything Bagel Seasoning.
- Lastly, place the baking sheet in the oven on the middle rack and bake for 12-14 minutes or until golden brown.
Serve with cream cheese, lox, tomatoes, butter, or jam. Enjoy!
