Not exactly an omelet, and not a crepe, but more like a crepe-like omelet rolled with ham and cheese. (We did use our crepe pan to make these egg roll-ups and it worked very well.). Get more details on this simple egg prep, and then give it a try!

Egg, Cheese, & Ham Roll-Ups
Serves 1

Ingredients: 
2 eggs, whisked together
1 tablespoon milk
a pinch of kosher salt and pepper
1 tablespoon chives
1 tablespoon butter
2 oz cheddar cheese, grated
3 slices ham, thinly sliced

DIRECTIONS:
1. On the stovetop in a crepe pan (or low-sided skillet) melt the butter over low or medium-low heat.

2. Whisk together the eggs, milk, and salt and pepper in a small bowl, and then pour into the pan. Lightly twirl the pan to encourage the egg to spread out into a thin crepe-like layer. Let the egg begin to cook, and then sprinkle with chives and cheese. Turn to low, and cover the egg. Cook until the egg is fully solidified.

3. Add a thin layer of ham slices. Remove from the heat, and carefully roll it up. Garnish with more chives and enjoy!
