This mould is ideal for Tatin tarts, since it allows you to form a caramel layer directly in the mould while it's on the heat. Once the caramel is formed in the mould, just add the apple slices, cover with pastry, and place the mould in the oven. Pressure cast aluminium is ideal for all regular cooking conditions and the thick bottom stands up excellently to deformation. Optimal non-stick properties enable easy turning out.
