Taco Salad with a Creamy Cilantro-Lime Dressing
serves 2-4
Salad Ingredients:
1 package taco seasoning
2 chicken breasts
2 tablespoons olive oil
1 yellow/red pepper, diced
green onion, sliced
1 avocado, diced
blend of taco cheese
2 tortillas, cut in strips
Romaine
Sliced
cherry tomatoes, halved
Dressing Ingredients:
6 tbsp olive oil
2 tbsp apple cider vinegar
Juice of 2 small limes
4 tbsp sour cream
2-4 tsp of taco seasoning
1/4 cup fresh cilantro, minced
Directions:
1. Sprinkle both sides of chicken breast with some of the taco seasoning and cook in a medium-hot pan with 2 tbsp olive oil. Cook until the chicken is completely cooked through and reaches 165 degrees F. Remove from pan, and dice on a cutting board. Return diced chicken to pan, and coat all sides with seasoning from the pan.
2. Make the tortilla strips, by cutting the whole tortillas with a pizza cutter or chef's knife. Toss the strips in a drizzle of olive oil and sprinkle with kosher salt and then broil in oven until the strips are slightly browned and crispy.
3. Prep the salad by adding all veggies together in a large bowl.
4. Make dressing by whisking to combine all.
5. Add the cooked and diced chicken to the salad bowls, and then add dressing. Garnish with tortilla strips. Enjoy!
