Sweet Potato Oven Fries & 3 Dipping Sauces

Sweet Potato Oven Fries & Three Dipping Sauces
makes 4 servings

Ingredients: 
5 medium-sized sweet potatoes
1 tablespoon cornstarch
2-3 tablespoons olive oil for drizzling
Freshly ground black pepper
Kosher salt

Directions:
1. Preheat the oven to 325°F. Line a rimmed baking sheet (11 x 15 x 1) with parchment paper.

2. Peel the potatoes, or scrub well if you choose to leave the skins on. Cut each potato lengthwise into wedges in approximately similar sizes.

3. In a large bowl, place the wedges and sprinkle the cornstarch on top. Toss with your hands until a very thin dusting covers the each wedge’s surface.

4. Position the potato wedges in a single layer on a large, lined baking sheet . Drizzle the wedges with the olive oil and toss again to distribute the oil. Sprinkle the wedges with generous doses of freshly ground black pepper and kosher salt.

5. Roast the potatoes in the oven for 15 minutes. Remove and turn the wedges. Roast for another 10-15 minutes, or until the potatoes are tender and easily pierced with the tip of a knife.

6. Serve while hot.

Dipping Sauces:

Honey Mustard Dipping Sauce
To make, simply whisk all of the ingredients together:
1/2 cup coarsely ground Dijon mustard
1/2 cup mayonnaise
3 tablespoons honey
2 tablespoons fresh lemon juice
1/8 teaspoon cayenne pepper

Garlic-Lime Dipping Sauce
Measure and whisk all of the ingredients together: 
1 cup mayonnaise
6 cloves of garlic, crushed
Zest of one lime
Juice of one lime, freshly squeezed (about 2 tablespoons)
2 tablespoons cilantro, minced
1/2 tablespoon Tabasco sauce or other hot sauce
Salt and pepper to taste

Ginger, Lime, Almond Dipping Sauce
A variation on a classic spicy peanut sauce, this dipping sauce shifts the flavor with the use of almond butter; it’s a nice change that loves Sweet Potato Fries! Assemble the ingredients and whisk together:
1/2 cup almond butter
2 tablespoon soy sauce
1 lime, freshly squeezed
1 tablespoon rice wine vinegar
2 teaspoon sugar
1 teaspoon Thai red chili paste
1 teaspoon grated ginger
1 clove garlic, minced
1/2 teaspoon sesame oil
1-2 tablespoon warm water, adjust to achieve the desired dipping consistency
