Spring Pea & Mint Soup
serves about 4
Ingredients:
1 tablespoon olive oil
1 tablespoon butter
1 yellow onion, diced
32 oz. frozen peas
1 leek, sliced
1/2 cup mint
4 cups chicken broth
2 tablespoons half and half
1/2 teaspoon black pepper
1 teaspoon kosher salt
garnish with mint
Directions:
1. In a medium saucepan over medium-high heat, sauté the onion and leeks in butter and olive oil. Salt and pepper while sautéing.
2. After about 5 minutes, add 4 cups of chicken broth and bring to a boil.
3. Add the peas and cook for 3 minutes. Remove from the heat, add the mint, the remaining broth, and half and half.
4. Blend until smooth and salt and pepper to taste.
5. Serve warm or chilled with mint garnish and enjoy!
