Roasted Spiralized Sweet Potatoes with Dijon Dipping Sauce
Serves 2-4
Ingredients:
2 sweet potatoes, scrubbed
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon Kosher salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne
Mustard Dipping Sauce Ingredients:
1/4 cup Dijon mustard
2 tablespoons mayonnaise
1 teaspoon fresh lemon juice
1 small garlic clove, minced
1/8 teaspoon cayenne
1/8 teaspoon kosher salt
Directions:
1. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
2. Cut both ends off of one sweet. potato to create a flat surface on each side, and attach one end of the sweet potato to the prongs of a spiralizer. Turn the handle to cut the potato into spirals until it is completely cut through. Repeat until both of the potatoes have been cut.
3. Line the potatoes on the baking sheet, drizzle with olive oil, sprinkle with cayenne, garlic powder, salt and pepper and roast for 25 minutes, or until the potatoes are crispy.
4. Whisk together the mustard ingredients in a small dish and serve immediately with the sweet potato fries.
