Reubens with a Lighter Russian Dressing
Sandwich Ingredients:
Butter on Rye Bread
Swiss cheese, thinly sliced
Corned Beef, thinly sliced
Sauerkraut
Russian Dressing
A Lighter Russian Dressing:
TO MAKE THE DRESSING, COMBINE ALL IN A FOOD PROCESSOR:
1/2 cup Greek yogurt
1/4 cup light mayonnaise
2 tbsp ketchup
1 tsp Worcestershire sauce
2 tbsp red wine vinegar
2 tbsp sweet pickle relish
1 hard boiled egg
1/2 tsp Dijon
1/4 cup onion
1 clove garlic
1 tsp sugar
kosher salt, to taste
pepper, to taste
DIRECTIONS:
1. Assemble the sandwiches. Butter both pieces of bread.
2. Layer one slice of cheese on the bottom piece of bread. Load up the corned beef, add a scoop of sauerkraut and then drizzle with the dressing.
3. Press in a panini press until the cheese melts. Cut in half, and serve warm!
