Reid's Lucky Chocolate & Stout Cupcakes

Celebrate St. Patrick's Day with these sweet and chocolate-y cupcakes! 

LUCKY CUPCAKES
makes 24 cupcakes

INGREDIENTS:
1 cup stout beer 
12 tablespoons unsalted butter 
3/4 cup unsweetened cocoa powder 
2 cups all-purpose flour
2 cups sugar
2-1/2 teaspoons baking soda 
1/4 teaspoon salt 
1/2 cup sour cream
2 large eggs
16 oz cream cheese frosting 
green sprinkles

DIRECTIONS:

1. Preheat the oven to 350°F. Place cupcake liners in two (12 count) cupcake pans. Combine the stout beer, butter, and cocoa in a medium saucepan and heat over medium-low, whisking until butter is melted and ingredients are incorporated. Remove from heat.

2. Combine flour, sugar, baking soda, and salt in a large bowl and whisk together. Set aside.

3. In a stand or handheld mixer, combine sour cream and eggs, blending on low. Slowly add to beer mixture until both mixes are evenly incorporated. Next, gradually add the flour mixture and mix on low until batter is smooth. Pour the batter into cupcake liners, 3/4 full. Bake for 17-20 minutes.

4. Frost the cupcakes and add green sprinkles, if desired.
