Reid's Fall Frisée Salad
Serves 2
SALAD INGREDIENTS:
4 cups arugula
1 head frisee, cut into bite-sized pieces
1 apple, julienne cut
1/8 cup walnuts, lightly toasted
4 oz goat cheese, crumbled
2-3 pickled beets, thinly sliced
DRESSING INGREDIENTS:
whisk all ingredients together in a small bowl
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon honey
1/4 teaspoon kosher salt
1/4 teaspoon pepper
DIRECTIONS:
In a large bowl mix together the arugula, frisée, apples, and toasted walnuts. Lightly toss with the dressing and top with the beets and goat cheese.
