Kale & Apple Salad with an Avocado-Tahini Dressing
serves 2-4
Salad Ingredients:
1 bunch purple kale, massaged with 1 teaspoon of lemon juice,1 tablespoon of olive oil, and a pinch of kosher salt
1 cup matchstick carrots
5 green onions, sliced
1 apple, sliced
6 oz feta cheese, crumbled
Dressing Ingredients:
makes about 1 cup of dressing
1/2 of a ripe avocado
1/4 cup tahini
3 tbsp fresh lemon juice, or more to taste
pepper, to taste
2 tbsp olive oil
1/4 cup cold water
kosher salt, to taste
Directions:
1. Prepare the avocado-tahini dressing by blending all of the dressing ingredients together with a small food processor. Taste, and adjust the amounts of lemon juice, salt, and pepper according to your preferred taste.
2. Prepare the kale. Strip the leaves from the stalk. Rip into bite-sized pieces. Massage the kale with one teaspoon of lemon juice, olive oil, and kosher salt. Massage the kale until it begins to soften.
3. Toss the apple slices, green onions, and carrots with the massaged kale. Dress with a few tablespoons of dressing, and garnish with feta cheese crumbles, salt, and pepper.
