Grilled Cantaloupe Salad With Prosciutto, Fresh Mozzarella, & Mint
serves 2
Ingredients:
1/2 cantaloupe, deseeded and sliced into 1/4" thick slices for grilling
3 slices proscuitto, torn into bite-sized pieces
4 oz fresh mozzarella, torn into bite-sized pieces
Mint leaves, chiffonade cut, as garnish
Drizzle of olive oil
Flake salt and pepper
Directions:
Grill the cantaloupe pieces on direct heat on each side for 1-2 minutes. Then place on a plate with torn prosciutto and mozzarella. Garnish with the mint leaves and drizzle with olive oil. Sprinkle with flake salt and freshly ground pepper. Then refrigerate until very cold and enjoy!
