​Grilled Cantaloupe Salad with Prosciutto, Fresh Mozzarella, and Mint

Grilled Cantaloupe Salad with Prosciutto, Fresh Mozzarella, and Mint

Ingredients:
1/2 cantaloupe, deseeded, and sliced into 1/4” thick slices for grilling
3 slices prosciutto, thinly sliced and torn into bite-sized pieces
4 oz fresh mozzarella, torn into bite-sized pieces
Mint leaves, chiffonade, as garnish
Drizzle of olive oil
Flake salt and pepper

Directions:
1. On a well-oiled grill over high-heat, grill the cantaloupe slices on each side for 1-2 minutes. Once grilled, remove the rind from the slices with a sharp knife. Place the grilled melon on a serving platter in a single layer. 

2. Build the salad by adding thinly sliced pieces of prosciutto and bite-sized pieces of fresh mozzarella around the plate. 

3. Garnish the salad with fresh mint leaves and a drizzle of quality olive oil. 

4. Sprinkle with flake salt and freshly ground pepper. 

5. Cover and refrigerate until very cold and enjoy!
