Great Granola
makes 7 cups
Ingredients:
2 cups old-fashioned rolled oats
1/2 cup oat bran
1/2 cup wheat germ
1/2 cup sweetened shredded coconut
1/2 cup coarsely chopped pistachios
1/2 cup sliced almonds
1 teaspoon cinnamon
1/4 teaspoon ground cardamom (optional)
1/2 teaspoon kosher salt
1/4 cup pure maple syrup (or honey)
1/4 cup brown sugar
1/4 cup olive oil
1 teaspoon vanilla extract
1/2 cup chopped dried apricots
Directions:
1. Preheat the oven to 325°F. Line a rimmed baking sheet (11 x 15 x 1) with parchment paper.
2. Mix the dry ingredients together well in a large bowl so that everything is evenly distributed – oats, oat bran, wheat germ, coconut, pistachios, almonds, cinnamon, cardamom, and salt.
3. In a separate bowl, combine and mix well the following ingredients – maple syrup, brown sugar, olive oil, and vanilla extract.
4. Drizzle the wet mixture over the dry mixture, tossing intermittently while drizzling to distribute evenly. Stir together well.
5. Spread the mixture on the prepared baking sheet in an even layer. Bake for 30 minutes, stirring every 10 minutes. Add the chopped dried apricots, stir to distribute and bake another 10 minutes.
6. Remove from the oven and allow the mixture to cool completely. It may appear wet initially, but as it cools, the liquids will be absorbed and the granola will dry.
7. Store in an airtight container for up to two weeks. Enjoy with yogurt and fruit.
