Filet Mignon for Two!
serves 2
Ingredients:
2 (6 oz each) filet mignon steaks
1 tablespoon olive oil
1 tablespoon butter
Kosher salt and black pepper
Directions:
1. Remove steaks from the refrigerator 30 minutes before cooking. Season with a generous sprinkling of kosher salt and freshly ground black pepper on all sides.
2. Preheat the oven to 400 degrees F.
3. Heat the olive oil and butter in a cast iron skillet until sizzling hot. Sear the steaks on each side for 2 minutes until a crust forms. Place the seared steaks in the oven and cook for 4-5 minutes, or until the center reaches 125 degrees for rare or 130 degrees F for medium. Let the steaks rest for 5-10 minutes before serving.
