Chunky Tomato Soup
Serves 4
This hearty tomato soup comes together quickly and is packed with rich, savoury flavours. And of course, nothing complements tomato soup better than a classic grilled cheese! To turn it into a complete meal, top each bowl with grilled cheese “croutons” by cutting a sandwich into bite-sized pieces. For a finishing touch, add fresh basil for an extra burst of flavour.
Ingredients:
2 tablespoons olive oil
2 tablespoons butter
1/2 onion, minced in food processor
2 stalks celery, minced in food processor
1 can (28 oz) diced tomatoes, undrained
1-1/2 cups vegetable broth
2 teaspoons honey
1/2 teaspoon kosher salt
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon coarsely ground pepper
1 teaspoon balsamic vinegar
Garnish:
fresh basil chiffonade
grilled cheese “croutons”
Directions:
1. Heat olive oil and butter in a large soup pot over medium heat. Add the minced onion and celery, sautéing until they become translucent.
2. Stir in the tomatoes, broth, honey, and spices. Let the mixture simmer for about 15 minutes, allowing the flavors to meld.
3. Remove half of the soup and blend until smooth using a high-powered blender. Return the pureed portion to the pot, mixing it with the remaining chunky soup.
4. Add 1 teaspoon of balsamic vinegar and stir well.
5. Serve hot, garnished with grilled cheese croutons and fresh basil.
