Cheese Fondue

We love a romantic fondue dinner! Serve cheese fondue with crusty bread cubes that are lightly toasted. You can also enjoy the cheese fondue with blanched broccoli or cauliflower, roasted potatoes, or slices of apples and pears. Complete the meal with a charcuterie board with some of your favorite cured meats, grapes, and olives. Take it to the next level with chocolate fondue for dessert!

Cheese Fondue
Serves about 4

Ingredients:
1 clove of garlic
8 oz. Swiss Emmentaler cheese ( 2 cups grated)
8 oz. Swiss Gruyère cheese (2 cups grated)
1-1/4 cups dry white wine
1 tbsp. cornstarch
2 tsp. brandy
1 tsp. lemon juice

Directions:

1. In a fondue pot or medium saucepan, rub the inside of the pot with the cut side of a garlic clove.

2. Prepare the cheese by coarsely grating. Set aside.

3. Combine the cornstarch with the brandy and lemon juice until a slurry is formed. Set aside.

4. Add the wine and cheese to the pot and stir gently until melted. Add the cornstarch mixture. Continue to stir until thickened. Avoid using too high of heat; keep it at a low simmer until bubbly.

5. Serve with cubes of good crusty bread (lightly toasted), blanched broccoli florets, roasted potatoes, and or slices of apples and pears.
