Arugula Pesto
Ingredients:
4 cups packed fresh arugula
2 garlic cloves, minced
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup olive oil
2 tablespoons pine nuts
1/2 cup freshly grated parmesan
1/4 cup Romano cheese
1 tablespoon fresh lemon juice
Directions:
Combine all ingredients in a food processor or high powered blender until smooth. If you'd like, serve the pesto atop grilled flatbread, topped with fresh mozzarella, blistered grapes, and more arugula.
