The prep top holds eighteen 1/6-size, 4-inch-deep polycarbonate pans, keeping ingredients organized and easily accessible. Enhanced airflow technology maintains product temperatures between 36°F and 38°F, ensuring that items in open containers remain below 41°F while staying above freezing.
The four refrigerated drawers feature stainless steel frames supported by telescoping drawer slides with a locking mechanism that prevents accidental removal, ensuring smooth and secure operation. A 10-inch-wide white polyethylene cutting board offers a durable prep surface and is removable for easy cleaning.
Mounted on 6-inch casters, including two with brakes, the unit can be easily repositioned and securely locked in place.
