All-Clads stainless-steel Dutch ovens are considerably lighter and easier to handle than the enameled cast-iron versions, at only seven pounds. While stainless steel does not hold heat quite as well as cast iron, it does transfer heat rapidly and evenly. During tests, we here at WFE found that this Dutch Oven did a better job of searing chicken and bringing the braising liquid to a quick boil before it steamed. In addition to braise, soup, and gravy, All-Clad's Dutch ovens would be an ideal vessel for frying. It is also easy to clean since it is dishwasher-safe, but the surface is a bit more susceptible to scratches.

But it offers higher-end Dutch Ovens that have copper cores instead.

Put simply, copper is even better at conducting heat than aluminum. With All-Clad’s Copper-Core Dutch Ovens, the copper replaces an inner aluminum layer. For example, a 5-ply copper All-Clad Dutch oven will have two layers of stainless steel, two layers of aluminum, and only one internal layer of copper. Copper is also lighter than aluminum.
