The 5-inch Nakiri Knife in the series features a keen Asian-style taper-ground edge for stability, easy honing, sharpness retention, and efficient cutting and chopping. Crafted from 67 layers of Cangshan's X-7 Damascus Steel, each blade undergoes the ULTRA6 heat treatment to ensure strength and functionality. Hand-sharpened to a 16-degree angle and with a Rockwell Hardness rating of 60 +/- 2, the HAKU Series knives are incredibly sharp and retain their edges exceptionally well.
