About Thermalloy
Thermalloy is the flagship cookware brand of Browne Foodservice, a Canadian manufacturer and distributor founded in 1949. Designed specifically for commercial kitchens, every Thermalloy piece is built to withstand the demands of professional foodservice - heavy gauge construction, riveted handles, NSF listed where applicable, and materials engineered to perform under repeated high-heat use and commercial warewashing. The collection is PFOA and PTFE free throughout. Browne operates out of Canada, making Thermalloy a genuinely Canadian commercial cookware option with broad availability and consistent supply.
The Thermalloy Range
Thermalloy cookware is available in several distinct material lines, each suited to different kitchen applications:
- Thermalloy Tri-Ply - Three bonded layers: stainless steel interior, aluminium mid-layer, stainless steel exterior. Superior thermal conductivity with even heating across the bottom and sides. Induction ready. Available in fry pans, sauce pans, sauce pots, roast pans and woks.
- Thermalloy Stainless Steel - Impact-bonded heavy gauge stainless steel with a sandwiched aluminium core at the base. Faster, more even heat distribution than single-ply stainless. Induction compatible. The broadest line: braziers, fry pans, sauté pans, sauce pans, sauce pots, stock pots, pasta cookers, paella pans and double boilers.
- Thermalloy Aluminium - Heavy gauge aluminium for high volume, fast-heating applications. Fry pans, sauce pans, stock pots, braziers, roast pans, bun pans and more. The workhorse line for high turnover kitchens.
- Thermalloy Carbon Steel - Seasoned carbon steel fry pans for professional searing and high-heat cooking. Lighter than cast iron, responsive to temperature changes, develops a natural non-stick patina over time.
- Thermalloy Cast Iron - Pre-seasoned cast iron skillets and mini cast iron pieces for searing, serving and presentation. PFOA and PTFE free, gas, electric, ceramic, halogen, induction, oven and grill safe.
Which Thermalloy Line Is Right for Your Kitchen?
The right Thermalloy line depends on your kitchen's volume, heat source and menu requirements.
- High volume, induction or front of house display - Tri-Ply. Even heating on all surfaces, stainless exterior cleans well and looks sharp on the pass.
- General commercial use on gas or electric - Stainless Steel with aluminium core. Durable, versatile, covers the full range of cooking tasks.
- High turnover frying and boiling, budget-conscious spec - Aluminium. Heats fast, lightweight, widely used in institutional and production kitchens.
- Searing and high-heat protein cookery - Carbon Steel. Preferred by many professional cooks for its responsiveness and the cooking surface it develops with use.
- Table service, individual portions or presentations - Cast Iron Minis. Ideal for serving dishes directly from oven or grill to table.
Caring for Thermalloy Cookware
Stainless steel and tri-ply pieces are commercial warewasher safe. For best results, avoid harsh abrasives on polished interiors; a stainless steel cleaner restores shine if discolouration occurs from high heat. Aluminium pans should be handwashed or run through low-alkalinity commercial dishwashers - high alkalinity detergents can darken the surface over time, which does not affect performance but may affect appearance. Carbon steel pans must be dried immediately after washing and lightly oiled before storage to prevent rust; the more they are used, the better the cooking surface becomes. Cast iron pieces should be dried thoroughly and stored in a low-humidity environment; re-season periodically with a light coat of oil.

Is Thermalloy a Canadian brand?
Yes. Thermalloy is manufactured and distributed by Browne Foodservice, a Canadian company that has supplied the foodservice industry since 1949.
Is Thermalloy cookware induction compatible?
The Thermalloy Tri-Ply and Thermalloy Stainless Steel lines are induction ready, as both have a stainless steel exterior layer. Aluminium pans are not induction compatible unless specified. Cast iron pieces are induction safe.
Is Thermalloy cookware NSF certified?
Many Thermalloy pieces are NSF listed, which confirms they meet the sanitation and safety standards required for commercial food contact equipment. NSF listing status is noted on individual product pages.
What is the difference between Thermalloy Tri-Ply and Thermalloy Stainless Steel?
Tri-Ply has three bonded metal layers running the full height of the pan - stainless steel, aluminium, stainless steel - giving even heat distribution across the entire cooking surface including the sides. The Stainless Steel line uses an impact-bonded aluminium core at the base only, which is effective for most cooking tasks at a lower price point.
Is Thermalloy carbon steel good for professional kitchens?
Yes. Carbon steel fry pans are a well-established choice in professional kitchens for high-heat searing and sautéing. Thermalloy carbon steel pans are lighter than cast iron and respond quickly to temperature changes. They develop a natural cooking patina with use and are PFOA and PTFE free.
Can Thermalloy pans go in a commercial dishwasher?
Stainless steel and tri-ply Thermalloy pieces are commercial warewasher safe. Aluminium pans should be washed with low-alkalinity detergents to avoid surface darkening. Carbon steel and cast iron should be handwashed and dried immediately.
