Salt and Pepper Biscuits

Salt and Pepper Biscuits
makes about 8 biscuits 

INGREDIENTS: 

2 cups all-purpose flour
1 tablespoon baking powder
1-1/2 teaspoon. baking soda
1 teaspoon Kosher salt
3/4 cup unsalted butter, cold
1/2 cup buttermilk
1 large egg
pepper, freshly ground, for garnish
flake salt, for garnish

FOR THE EGG WASH: 

1 large egg 
1 tablespoon buttermilk

Directions:

1. Preheat the oven to 400 degrees F. Combine the dry ingredients in a food processor and pulse to mix together. While the butter is still very cold, use a box grater to grate the butter directly into the dry mixture and pulse briefly until butter is incorporated and resembles small peas. Do not overmix. 

2. In a separate bowl, whisk the buttermilk and egg together until combined and add to the flour mixture, using hands to combine. 

3. Lightly knead the dough into a ball. Roll into 1-inch thickness and cut 2-1/2 inch round biscuits with a biscuit cutter.

4. Whisk the egg and buttermilk together to create a wash and use a pastry brush to brush the wash on top of each biscuit. Sprinkle the tops of the biscuits with a little freshly ground pepper and a sprinkle of flake salt. 

5. Transfer the biscuits to a baking sheet lined with parchment paper and bake for 12 minutes or until golden and fluffy.
