​Roasted Brussels Sprouts & Kale with Bacon

Roasted Brussels Sprouts & Kale with Bacon
Serves 2-4

Ingredients:
6 pieces bacon, baked on a sheet pan
2 cups shaved Brussels sprouts (use a handheld mandoline and hand guard, or slice finely with a sharp knife)
2 cups kale, torn into bite-sized pieces
Kosher Salt & Pepper
Juice of 1 small lemon

Directions:
1. Place the bacon on a sheet pan, and bake in a non-preheated oven set at 400 degrees F. Check the bacon often, as the cooking time depends on the thickness. Once crispy, remove from sheet pan, and drain on a paper towel-lined plate, then crumble into bite-sized pieces.

2. Mix the shaved Brussels sprouts and kale with the remaining bacon grease on the sheet pan. Sprinkle the greens with a healthy pinch of kosher salt and pepper. Drizzle with lemon juice and mix. Roast for about 20 minutes (or until the greens are roasted to your desired taste.)

3. Serve warm with crispy bacon on top.
