Lemon Chicken Alfredo
Serves 4-6
Ingredients:
1 pound fettuccine, cooked according to package instructions
parsley leaves, minced as garnish
Sauce Ingredients:
4 tablespoons butter
1 shallot, minced
2 cloves garlic, minced zest & juice of 1 lemon (2 tablespoons)
2 tablespoons flour
1/2 cup white wine
2 cups half and half
1/2 cup parmesan cheese, grated
Marinade Ingredients:
1 small lemon, juiced
2 chicken breasts, cut into thin cutlets
1/2 teaspoon oregano
1/8 teaspoon paprika
kosher salt
pepper
Directions:
1. Marinate the chicken by placing all ingredients in a bowl together for 20 minutes.
2. Meanwhile, prepare the lemon alfredo sauce. Sauté the shallot and garlic in butter until translucent. Add the flour, and cook for 2 minutes. Add the lemon juice and zest, white wine and simmer until the white wine is reduced down. Add the half and half and parmesan and simmer until slightly thickened. For an extra delicious sauce, blend togerther with a blender until smooth and return to the sauté pan.
3. Cook the chicken in a grill pan over medium-high heat until cooked through to 165 degrees F. Slice the chicken.
4. Prepare the noodles according the package instructions.
5. Once the noodles are cooked, add to the sauce and mix until coated. Serve noodles with chicken and a garnish of parsley and lemon zest.
