COLOURFUL KALE SALAD
serves 2

Dressing Ingredients: 

3 tbsp olive oil
1 tbsp fresh lime juice
1 tsp rice wine vinegar
1/2 tsp soy sauce
1/8 tsp fresh ginger, grated
1 clove garlic, minced

Salad Ingredients: 

1/2 small bunch Tuscan kale, stemmed & chopped finely 
1 carrot, shaved in ribbons using a vegetable peeler
1/2 cup edamame, shelled
1/2 red pepper, diced
1/2 avocado, diced
1/8 cup fresh cilantro, chopped
1/4 shallot, sliced finely
freshly ground pepper

Directions: 

1. Whisk all dressing ingredients together. 

2. Prepare the veggies for the salad. 

3. Massage the dressing into the kale, and then toss in the remaining vegetables. Enjoy!
