Cheesecake-Stuffed Strawberries

Ingredients: 

8 oz. mascarpone cheese
1 cup powdered sugar
1/4 teaspoon vanilla extract
a pinch of salt
1 quart of strawberries, cut in quarters nearly all the way through
2 tablespoons pistachios, chopped for garnish

Directions: 

1. Whip together the mascarpone cheese, powdered sugar, vanilla extract, and salt until fluffy and combined.

2. Hull, then split the strawberries into quarters cutting nearly all the way through.

3. Pipe the whipped filling into the center of each berry. Top with chopped pistachios.
